Per Se, New York

Without reserving eight weeks in advance, you don’t stand a chance with star chef Thomas Keller. “Per Se” in Central Park qualifies as one of New York’s most exclusive restaurants. Thomas Keller is considered America’s most innovative and successful chef: his New York restaurants “Per Se” and “French Laundry” in Napa Valley have both been awarded three Michelin stars. “Per Se” has a refined elegance about it, no more than 16 tables and is known as one of the city’s most expensive establishments. Yet it is an oasis of calm in an otherwise frantic city with a wonderful view over Central Park. Thomas Keller is extremely dedicated to his work. With nine courses of excellent cuisine and a wide yet selected range of wines on offer, those who make it for dinner will not be disappointed. Getting a table is extremely tricky: either you book exactly two months in advance, or you put your name on a waiting list.
