Wine and chocolate? That may seem a strange combination but for every wine produced in the region Hirsinger have created a specific chocolate to compliment it; for example aniseed chocolate for Chardonnay, green pepper Ganache for Vin Jaune and a liquorice praline for a bold red. The Hirsinger family have been producing luxury chocolates for the last 100 years and that tradition is something which Edouard wants to maintain: “Our chocolates are not cooled and preservatives and artificial flavourings are an absolute no-no.” Wherever possible the ingredients in Hirsinger chocolates come from the local area. Even the milk is from the nearby Arbois co-operative.
