Torres was previously the ingenious in-house patissier at the Hotel Negresco in Nice and since his tenure there ended things have never quite been the same. The desert legend then made his mark at the New York restaurant Le Cirque 2000 and several guests only dined here to sample his delectable sweet dishes. Nowadays he’s working for himself and has his own Brooklyn-based chocolate boutique where half of New York make the pilgrimage to sample chocolates flavoured with lemon juice, Early Grey tea, vodka spritzer and passion fruit. Of course customers will bemoan the fact that Torres’ rich brownies are only available on Saturdays. Perhaps the cleverest idea here is the ‘Chocolate Subscription’ whereby each season subscribers receive a new selection of chocolates in the first week of the month. For example in November it’s Champagne truffles and ginger chocolate; in April, chocolate cornflakes.
