At Joël Durand you are taken on a walk through the chocolate alphabet as each creation here is designated a letter from A to Z: A stands for the Carré Or which contains 70% cocoa solids while Z is the milk chocolate almond praline. Durand belongs to a very small number of professional chocolatiers who has elected to base himself away from the traditional capital city business centers. His boutique in Saint-Rémy de Provence is tiny and old-fashioned. Customers choose their personal chocolate assortment from a traditional-style pharmacist’s cabinet. Here you can choose from saffron chocolates flavoured with Tiramisu, cumin or verbena. Kids tend to opt for the rich nut nougat cream. In order to maintain a highly unique taste, the cocoa beans used in Durand’s chocolates are specifically chosen for him by a specialist. Durand’s creativity has since stretched far beyond the letters available to him in the alphabet; therefore the new mimosa caramel is represented by a comma!
